I don't know about you but I'm obsessed with avocados! I could eat them everyday. They replace mayo on sandwiches, make the perfect complement to fried eggs and turn boring old toast into something special. Avocados are a good source of heart healthy monosaturated fats, potassium and fiber. They can help keep you fuller longer and may even lower cholesterol. Avocados are a great addition to any healthy diet.
Avocados are probably best known as the main ingredient in guacamole. I love guacamole but tortilla chips aren't exactly the healthiest choice and let's be honest, the two go hand in hand. I always end up eating way more of them than I mean to! I wanted a way to enjoy all the flavor of guac without the need for tortilla chips. That's when the Guacamole Salad was born. Served alone or over a bed of greens, this salad does not disappoint! Traditional guacamole ingredients combine with a spicy lime vinaigrette to make a side dish perfect for summer dinners.

2 ripe avocados sliced and cubed
1/4 red onion, thinly sliced
2 tomatoes-chopped -or- halved cherry or grape varieties
2 Tablespoons olive oil
1 Tablespoon red wine vinegar
Juice of 1 lime
Tabasco sauce to taste*
Salt & pepper to taste
Whisk dressing ingredients, set aside. Combine salad ingredients in bowl. Add dressing to salad, gently toss to coat. Garnish with cilantro if desired.
*I use several dashes, you can go up to a teaspoon if you like things on the spicy side!
