Salads are the first thing many people think of when they hear "clean eating". They picture sad piles of iceberg topped with tasteless low fat dressing or worse yet, nothing! Yuck. No one wants to eat that every day and there is no need to! There are so many delicious, healthy and flavorful salad options out there. No one should ever have to choke down one of those blah plates of iceberg ever again.
Today's salad is a cool, creamy cucumber salad that takes just a few minutes to make and is the perfect side to just about any summer dinner. This is a fresh take on a classic salad from my childhood. I've swapped out the sour cream for Greek yogurt to cut calories and fat without sacrificing a bit of the tangy flavor. This isn't a recipe that calls for strict measurements so feel free to take creative liberties with the amounts to suit your family's preferences.

Cool & Creamy Cucumber salad
1 seedless cucumber
1/4 cup Plain Greek Yogurt
thinly sliced red onion to taste
1 tsp. dill or to taste
salt & pepper to taste
Peel and cut cucumber into desired sizes. (Remove seeds before slicing if using traditional cucumbers).
Stir in Greek yogurt, onion, dill and salt & pepper to taste.
Cover and keep refrigerated until ready to serve. Enjoy!
