Mini frittatas, egg muffins, egg cups. Whatever the name, you'll be calling these little protein packed treats your new favorite breakfast! They cook up quickly, can be made to suit any taste, reheat easily and travel well-could you ask for anything more from a breakfast food? Oh! And they're healthy too! Unlike most "grab and go" breakfast options, these egg muffins keep you full until lunch. No sugar crash, no chemical preservatives and no crazy sodium content. Who says convenience food has to be junk?
I've been making these for a few years, most often as an easy weekday breakfast and also on occasion as a quick and easy appetizer. They are cute enough to serve to guests and look adorable on a brunch spread. The recipe is so easily adapted you won't get tired of it anytime soon. I'll share the basics today but get creative and add anything you would put in an omelet....meats, cheese, veggies, the options and combinations are practically endless. Enjoy!
Egg Muffin recipe
1/2 cup milk
1/4 tsp. pepper
chopped cooked breakfast meats, diced veggies, onions, etc.
Preheat oven to 350 degrees.
Beat eggs, milk and seasonings well. **Stir in fillings of choice. Carefully grease muffin tins. Fill each muffin cup 3/4 full. Bake for 20-25 minutes or until set. A knife inserted in the center should come out clean. Remove from pan and store in an airtight container for up to a week.
Makes 24 muffins.
**Chop up your favorite fillings and add to the mixture-OR-if you want a variety place different combinations of fillings in the greased tins and carefully pour the egg mixture on top. Hubby and I love veggie filled eggs while the kids prefer basic meat and cheese options so this is what I do. Keeps everyone happy and only takes a few extra minutes. I throw my veggies in raw but if you prefer a softer texture cook for 5-7 minutes or until tender then add to the eggs. (I've done both and they are delicious either way!).
